What is soy lecithin and why do you use it?Updated 8 months ago
Soy lecithin (or soya lecithin) is a natural stabiliser derived from the soya bean. We use trace amounts in most of our chocolate to make it lovely and smooth and flowy, allowing us to create the chocolate ‘crack’ around our rich creamy centres. For this reason, it is very difficult to source milk or mild dark chocolate without it.
However, Extra Dark chocolates with 100% Solomon Islands cocoa in the centre do NOT contain soy lecithin.
