What is soy lecithin and why do you use it?Updated 8 months ago
Soy lecithin (or soya lecithin) is a natural stabiliser derived from the soya bean. We use trace amounts in most of our chocolate to make it lovely and smooth and flowy, allowing us to create the chocolate ‘crack’ around our rich creamy centres. For this reason, it is almost impossible to source milk or mild dark chocolate without it.
However, our Extra Dark chocolates do NOT contain soy lecithin.
