What's the percentage of cocoa in your chocolates?Updated 8 months ago
The % cocoa content of a chocolate means the % of cocoa solids found in the powder, butter or liquor that is used to make it.
Our chocolates have 2 elements - the shell and the centre.
All our dark chocolate shells have 72% cocoa solids, while our milk chocolate shells contain 40%.
Simple!
But for the centres it isn't as straightforward...
For the cocoa element, we use a very high-quality cocoa liquor, with a high % of cocoa solids (100% in the case of our extra dark). But of course, this is then mixed with other ingredients - primarily butter and cream - to create the actual centres. So, the OVERALL % in the centres will of course be less than the % in the cocoa ingredient we use to make them...
To add to the complication, each flavour has a different mix of ingredients, which Steve - our co-founder and chocolatier - has painstakingly developed and perfected, to make all the delicious flavours we sell today.
So, the actual % of cocoa in the centres will vary according to our trade secret recipes - which we genuinely cannot share!
